hello everyone, come back to me hehe doesn't feel like a week has passed, and this week I return to practice in the kitchen to week 2 (two), today 10 february 2020, scheduled for monday, where the day is used to prepare ingredients. this week we are moving rotation menu material. or also called table d'hote which is a menu consisting of an appetizer, soup, main course and dessert. before continuing I will explain in advance what the Menu / table d'hote menu is.



Table d'hote Menu: Is a complete dish arrangement (full meal) with a definite price. The number of dishes is usually limited and consists of several groups of dishes. To maintain guest satisfaction, the hotel usually requests several meals for each group. Guests can choose one meal among the group, for example: in the appetizer group (appetizers) choose 3 foods, in the soup group (soup), 3 types of soup are allocated and so in the other groups.

and for processing this time my group got a Shrimp Bisque product whose role in the menu was soup. What is Shrimp Bisque?
Bisque is a soft, creamy thick soup that is rich in aromatic spices, which is one of the French dishes, traditionally made using solid broth (coulis) from Crustaceans. This soup can be made using lobster, langoustine, crab, shrimp, or freshwater lobster.



where me and my group make a preparation of the product that I made, that is making stock, specifically fish stock, after that I make french bread which is usually used as croutons. Is that crouton? the name 'crouton' comes from the French meaning 'crumb'. This term is to refer to small dice-shaped pieces of bread that are toasted. Generally it is made from yesterday's leftover bread.


Almost all types of delicious white bread made croutons. Like white bread, brown bread, baquette or other types of white bread. Previously, a small piece of bread was about 1 cm long. Now there is no limit can be cut according to taste. now I will explain what is french bread and how to make it.
French Bread is French bread, which is usually long in size like the picture above. Usually consumed as a complement to eating soup, the bread is only smeared with a mixture of butter and garlic, then sprinkled with chopped dried parsley, then baked and consumed with warm cream soup. how to make it as follows:

ingredients;

- 1500gr flour
- 45gr yeast
- 15gr of salt
- 750gr of water

How to make;

- Mix all dry ingredients (flour, yeast, and salt) until blended.
- lower the water slowly.
- knead the mixture until it is smooth, after proofing the mixture for 15 minutes.
- After proofing the dough, the dough becomes long. then proving again for 10 minutes. after that, it will take 20 minutes. then made into crutons.



after preparing finished we also oneline and do general cleaning then go home.
